Vegan Iron Man Cookies
I'm not claiming to shave any time but I may be onto a homemade alternative to protein, and energy bars. Don't worry these taste great even if you aren't training for an event.
You won't even miss the butter and eggs making our vegan friends happy, and the rest of us happy too. Train well my friends!
VEGAN IRON MAN COOKIES (MAKES 3 DOZEN)

- 1 banana - smashed

- 2/3 cup soy milk
- 1 tablespoon vanilla extract
- ½ teaspoon cinnamon

- 1 cup whole wheat flour
- 1 cup all purpose flour
- ½ teaspoon salt
- 2 cup old fashioned oats
- 2 tablespoons flax seeds
- ¼ cup slivered almonds - toasted
- ½ cup dried tart cherries
Preheat oven to 350°. In large mixing bowl combine peanut butter, banana, brown sugar, soy milk, and vanilla extract. In a separate bowl mix together cinnamon, baking soda, flour, salt, and oats. I'm all over these. I'm constantly looking for energy type breakfast and snack bars that are actually good for me. I love the ingredients in your recipe and will definitely try these. Thanks for posting them!
These look healthy! I think my kids would even be all over them!
I've just bookmarked them. They are MUCH healthier than the "Georgia Candy" by Paula Dean that I made today.
Honey is not vegan; please do not label non-vegan recipes as vegan.
@Joie @Kelly I hope that you make these soon and let me know what you think! We enjoyed them very much.
@Sadf Thank you so much for reminding me that honey is not vegan. I've modified the recipe slightly. For a non-vegan recipe try subbing 1/2 the brown sugar for honey. Thanks! Emily
Honey isn't vegan? Can someone enlighten me as to why that is? Thanks!
@Brittney - good question! In order to be vegan all products must be plant based. Honey of course is from bees, which although very cute are not a plant :)
I tried these and wow are they yummy!
Brittney - the recipe list does not call for honey although the directions did. Sounds like an error.
So glad you liked them Carmen! I'll edit the directions now. Honey or no honey they are soooo good.
Emily, my boyfriend requests these cookies quite a lot. Made them today just for him. Last week, I made them gluten free by using brown rice flour and banana flour in place the flours noted in the recipe. My running group thought they were great! Thank you again.
Awesome Carmen! What an awesome idea to make them gluten free...*LOVE* it! My husband loves these too but sadly I don't make them as often for him as I probably should...thanks for the reminder! Take care, Emily
