Vegan Iron Man Cookies

I'm not claiming to shave any time but I may be onto a homemade alternative to protein, and energy bars.   Don't worry these taste great even if you aren't training for an event.

You won't even miss the butter and eggs making our vegan friends happy, and the rest of us happy too.  Train well my friends!

Vegan Iron Man Cookies


  • ¾ cup peanut butter
  • 1 banana - smashed
  •  1 cup brown sugar
  • 2/3 cup soy milk
  • 1 tablespoon vanilla extract
  • ½ teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 cup whole wheat flour
  • 1 cup all purpose flour
  • ½ teaspoon salt
  • 2 cup old fashioned oats
  • 2 tablespoons flax seeds
  • ¼ cup slivered almonds - toasted
  • ½ cup dried tart cherries

Preheat oven to 350°.  In large mixing bowl combine peanut butter, banana, brown sugar, soy milk, and vanilla extract.   In a separate bowl mix together cinnamon, baking soda, flour, salt, and oats.  Add the dry mixture to the wet and flax seeds, almonds, and cherries.  When well combined, spoon heaping tablespoons of cookie dough onto baking sheets leaving some space in between.  Bake about 12 minutes.

I'm all over these. I'm constantly looking for energy type breakfast and snack bars that are actually good for me. I love the ingredients in your recipe and will definitely try these. Thanks for posting them!

Honey is not vegan; please do not label non-vegan recipes as vegan.

@Sadf Thank you so much for reminding me that honey is not vegan. I've modified the recipe slightly. For a non-vegan recipe try subbing 1/2 the brown sugar for honey. Thanks! Emily

@Brittney - good question! In order to be vegan all products must be plant based. Honey of course is from bees, which although very cute are not a plant :)

Brittney - the recipe list does not call for honey although the directions did. Sounds like an error.

Emily, my boyfriend requests these cookies quite a lot. Made them today just for him. Last week, I made them gluten free by using brown rice flour and banana flour in place the flours noted in the recipe. My running group thought they were great! Thank you again.
